Freshly picked coffee cherries are transported 50km to the sun-drenched Caatinga biome, a dry and warm region ideal for processing. During the journey, the cherries undergo a brief fermentation in closed trucks, a bold and innovative step that unlocks layers of fruity sweetness and enhances their natural complexity. The result?
